You have to make these superhero muffins!

I thought you guys needed a gift, so I'm sending it to you in the form of a muffin. Or, rather, a MUFFIN RECIPE!! This muffin has it all! It's clean full of veggies, filling, and DELICIOUS! WIN! Oh, and definitely kid-approved and lunchbox-worthy. superhero muffins

Superhero Muffins

Ingredients:

2 cups almond flour 1 cup old-fashioned rolled oats 2 teaspoons cinnamon ½ teaspoon nutmeg 1 tablespoon chia seeds 1 teaspoon baking soda ½ teaspoon sea salt ½ cup chopped walnuts (optional) ½ cup chopped dates, raisins, chocolate chips (optional) 3 eggs, beaten 1 cup grated zucchini 1 cup grated carrots 6 tablespoons unsalted butter ½ cup pure maple syrup 1 teaspoon vanilla extract

Directions

  1. Preheat the oYven to 350 degrees.
  2. In a large bowl, combine the almond flour, oats, cinnamon, chia seeds, nutmeg, baking soda, salt and walnuts, raisins, dates, or chocolate chips (if using).
  3. In a separate bowl, mix together the eggs, zucchini, carrots, butter, maple syrup, and vanilla.  Add the dry ingredients, mixing until just combined.  The batter will be thick.
  4. Spoon the batter into the muffin cups, filling each to the brim.  Bake until the muffins are nicely browned on top and a toothpick inserted comes out clean, 25-35 minutes.

Deviled Eggs - Healthy Snack Recipe

Easy and quick recipe for your kids after school snack! You can whip this snack up in about 5 minutes and your kids will eat them in less time than that! P.S -- The video is sideways, #momproblems!

Breakfast Burritos

  • 1 small onion, finely chopped
  • Diced green, yellow, or red pepper
  • A few pieces turkey bacon (cooks beautifully in a 350 degree oven for 10 minutes)
  • 3 eggs
  • Cherry tomatoes, sliced in half
  • Salt and pepper to taste
  • 2 TBS hand shredded cheddar cheese
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper

Cook the onion and pepper in a tsp olive oil until soft.  Add the eggs, a TBS water (to make them fluffy), tomatoes, cheese, and s and p.  Scramble the eggs up and transfer to a warmed up tortilla.  Add a piece of bacon and roll up.

This is a nice meal for a weekend breakfast or brunch time, as we usually have a bit more time in the mornings.  The protein will keep you full and satisfied.  Feel free to substitute egg whites.  I prefer whole eggs, but you can lower the cholesterol content by getting rid of the yolks.
