These are AMAZING!!! I make them on the weekend and eat on them all week long. Enjoy!
- 1 lb. ground chicken
- small can water chestnuts
- 2/3 cup shredded carrots
- 3 sliced green onions
- 2 cloves minced garlic
- 3 TBS all-natural peanut butter
- 2 TBS sriracha (or to taste)
- 1 tsp soy sauce (optional)
- salt to taste
Brown chicken with garlic, onions, and carrots. Add pb, sriracha, and soy sauce and mix through. Add water chestnuts and salt. Season to taste.
Serve on lettuce boats and a big glass of water.
